COOKING INSTRUCTION:

Duck Breast
  • Score the skin so you create diamonds
  • Season with salt and pepper
  • On the grill or in a pan with no oil on medium – medium-low heat place skin side down for 6-8 minutes or until the fat is rendered and the skin is crispy. Turn over and continue cooking for another 3-4 minutes, longer if you desire well done *if you are using a grill, just be careful of flair up and keep a bottle of water handy to control them*
  • allow resting for 3-4 minutes before serving with your favourite sides
Suggested Accompaniment: crispy fingerling potatoes, tart cherry jus and charred broccolini

Cornish Hen
  • Season your hen with salt and pepper and rub with oil *you could also marinate it in your favourite herbs and spices or stuff them with your favourite stuffing recipe*
  • On the grill on medium heat or in the oven at 375F place your hen breast side up for 25-30 minutes or until juices run clear *if you have stuffed your bird it may take up to 40 minutes and have a thermometer read 165F in the center of the stuffing*
  • Allow resting for 8-10 minutes before serving with your favourite sides
Suggested Accompaniment: wild rice pilaf with apricots and walnuts (also a good stuffing idea), and seasonal vegetables

Turkey Burger with caramelized onion and sage
  • On the grill in a pan with oil on medium HI heat sear, both sides for 4-5 minutes or until juices run clear
  • Allow to rest for 2 minutes and enjoy on your favourite bun and desired toppings!
Suggested Accompaniment: cranberry mayo, caramelized onion, brie and bib lettuce

Chicken Sausage with cranberry and pine nuts
  • On the grill or in a pan with oil on medium heat sear your sausage on both sides for 6-8 minutes *tip: to help your sausage from bursting pierce the skin a few times with a thin skewer or the tip of a sharp knife*
  • Allow resting for 3-4 minutes before serving with your favourite sides
Suggested Accompaniment: a nice crusty bun from your favourite bakers topped with a simple cabbage slaw with a side of sweet potato fries
